The short answer is that it does not know this.
It doesn't have to, though, it always sends a multi part message with both a text/plain and text/html body, it is the mail client that decides which body it should show.

Just for interest sake, how does EPiMail know when a email client doesn't support html? This relates to the 'Text Content' tab.
