Yes, that is totally supported. The metaclasses and metafields are shared for entire system - but there is nothing prevent you from using only metaclass 1 for catalog A and metaclass 2 for catalog B.
Yes it's however possible to create a product of metaclass 2 in catalog A. But if you are using PIM systems it should be no problem

We are currently working on a multi-site Episerver setup. 3 of the sites are going to use Episerver Commerce. However these 3 catalogs are very different when it comes to the structure of categories, products and variants, so my question is: Is it possible to have multiple definitions of catalogs?
We need to be able to import catalogs from 3 different PIM systems and all 3 catalogs are completely different in the way they are structured with product properties etc.
How can this be done?
