Updating Reserve Quantity to the Order Quantity on successful ordering

I am new to Epi Commerce. I have couple of questions.
1)What is the best way to update reserved quantity to the ordered quantity of the product upon successful order completion? and once shipped then i have deducted this reserved quantity from actual in stock quantity and reset reseved to 0.
2) Also i have to maintain to show available quantity for ordering as following on product detail pages and other pages : (In stock quantity - reserved quantity + oversell quantity) . This oversell quantity can be positive , negative or 0. I was thinking to use backorder in episerver which is available but i dont see anywhere where epi commerce utilizes this backorder in their AS-IS workflow. do i have to manage this custom in the frontend or do we have existing backorder functionality in epi?
