I'm having a problem with deleting orders from within Commerce Manager (deletion fails with message "Failed to process item(s). Error: Workflow generated an exception, please look at the previous error for more details.") and need to find out what's going on.
Where are the error logs supposed to end up?
What steps do I take to troubleshoot why logging isn't happening?

I can't seem to get the logging to work in Commerce Manager (v.11.3.0).
I followed your installation guide as described here: https://world.episerver.com/documentation/Items/Installation-Instructions/installing-episerver/#Commerce and haven't changed anything logging related but no error logging is happening.
