We are about to switch our webserver and I wonder what the best way to move the EPiServer installation from the old server to the new is?

You have two options, either 1) use a imaging software to make a complete copy of the server or 2) install the same version of EPiServer on the new server using EPiServer Manager and then manually move your templates and configuration.
